DirectionsStep1Line 2 baking trays with baking paper and preheat oven to 180 C.Step2Put the butter, 2 tbs of Natvia and salt in a pot with 250ml of water and bring to a simmer.Step3Add 150g of flour (reserving 2 tbs) and stir over a low to medium heat, until the paste comes away from the pan.Step4Transfer immediately to a bowl or stand mixer and use an electric beater to whisk on medium.Step5Add 4 eggs, one at a time, and increase speed until the mixture is smooth and glossy.Step6Use 2 teaspoons to blob the mixture onto the baking trays. Maintain the height by using one spoon to scoop it out of the bowl and the other to scrape it off gently. You should get 10 per tray.Step7Bake in the oven for 15 minutes or until golden on top. Remove from oven and set aside to cool. As your pastries cool, they may flatten.Step8To make the filling pour the milk and vanilla into a saucepan and bring to a light simmer. Do not boil.Step9Meanwhile, place 1 egg and egg yolk into a bowl with remaining natvia (4tbs) and the remaining 2 tbs of flour and whisk on medium.Step10Pour simmering milk into bowl very slowly while whisking until smooth and creamy.Step11Transfer back into saucepan and replace on low heat, whisking until mix becomes thick like custard.Step12Pour custard into a bowl, cover with glad wrap and place in fridge to cool.Step13Once pastry has cooled, gently pull or cut them apart half way, leaving one side attached.Step14Melt dark choc as per packet instructions.Step15Spoon 1 tsp of cooled custard into pasty. If your pastry has deflated, you can pop your custard into a ziplock bag, trim the end and pipe the custard in.     1. 1 Preheat oven to 200°C. Line 2 baking trays with baking paper. Place spread and 3/4 cup water in a saucepan and bring to the boil. Once boiling, add flour and stir vigorously for 30 seconds until mixture comes away from the sides.
    2. 2 Use a stick blender or food processor to beat mixture. Allow to cool slightly. Slowly add eggs as mixture thickens.
    3. 3 Drop 15 tablespoons of mixture onto prepared trays. Bake for 25 minutes or until puffed and golden. Working quickly, pierce a small hole in the side of each profiterole with a skewer and return to oven. Turn off oven and leave the door slightly ajar, allowing profiteroles to cool for 45 minutes. Cut in half horizontally.
    4. 4 Place chocolate in a small microwave-proof bowl and melt on high for 30 seconds. Carefully spoon into a small plastic bag. Squeeze chocolate into one corner of bag. Use scissors to snip off the bag corner to make a piping bag. Pipe chocolate over the top half of profiteroles and allow to set.
