If you want to reduce the carbs further then look at removing some of the onion, using fresh tomatoes rather than tinned and/or less cauliflower and broccoli. You could even have cauliflower rice instead of putting it in the curry itself.
Using paneer (an Indian cheese) would make a lovely vegetarian curry while tofu or additional veggies such as mushrooms, spinach, green beans or even sprouts would soon make it vegan. Just remember to swap out the ghee for coconut oil.
