1. In a bowl, mix together the tomato, shallots, half the chopped coriander, half the lime juice, 1 of the crushed garlic cloves, jalapeño and salt and pepper and set aside.
2. In another bowl, mix together the Greek yogurt, the rest of the lime juice, coriander and crushed garlic and a pinch of sea salt and black pepper and set aside.
3. Put the flour and cayenne (mixed) on one plate and the panko breadcrumbs on another. Beat the egg in a bowl and then one by one, dip the prawns in flour, then in the egg and then in to the panko breadcrumbs making sure they are coated.
4. Put the prawns on a lined and oiled baking tray and bake at 200°C/400°F/Gas 6 in a preheated oven for 10 minutes until crispy.
