2. Cut 4 pieces of foil all equal size, place 2 pieces on the counter then 1 rack on each piece of foil.
3. In a small bowl mix, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, chili powder, salt, pepper, and Swerve brown sugar.
4. Once mixed, spread the dry rub on the 2 racks of ribs. Rub into each rack, making sure you get the top, bottom, and sides fully coated.

1. Preheat the oven to 275F and put the oven rack in the middle position.
2. Cover the baking sheet with aluminum foil to make for easier cleanup. This isn't a required step but will definitely make it easier when it comes time to wash the pan.
3. Remove the membrane from the backside of the ribs if it's still attached. With a sharp knife, lift the point of the knife under the white membrane. Once it's a little loosened you can take your clean hands and slowly pull the membrane from the back of the ribs. This is optional, but the ribs will turn out more tender without the tough membrane attached.
4. Lay the baby back ribs on the baking sheet.

2. Remove the ribs from the packaging. Then, remove the membrane, or silver skin, off the back of the ribs. If needed, pat the meat dry so the ribs aren't too slippery when removing the membrane. To remove the membrane, you can slide a knife under it, work it loose with your fingers, then pull to remove it. Sometimes it's easier to remove if you grip the membrane with a paper towel as you remove it.
3. Coat the meat with a thin layer of water. Then, cover the ribs with the rub. Wrap tightly in foil and place in the fridge for 1 to 2 hours.
4. Preheat the oven to 225 degrees. Line a baking sheet with foil (for easy cleanup) and place the foil-wrapped ribs, meat side up, on the baking sheet. *Note- While I believe 225 degrees produces the best texture, they can also be baked at 275 degrees for around 2 to 3 hours and they will still be really delicious and tender!
