DirectionsStep1First, be sure to trim large chunks of fat off of your pork. Set aside.Step2Next, right in the crockpot combine all remaining ingredients and whisk together.Step3Add your pork into the slow cooker and just turn it over a few times to get it all nice and coated.Step4Set your slow cooker to high and cook for 6-7 hours (I recommend checking it after 4 hours and turning it to low if needed. Some slow cookers cook faster than others)Step5Once your meat is able to be shredded with a fork go ahead and shred the entire thing up. I like to use electric beaters for this (just be careful at first- it might splatter!)Step6Allow it to simmer for ~30-60 minutes on low to ideally to allow the sauce to really soak in (if you're in a rush you can skip this! I understand!)Step7Now enjoy! Scoop some onto a taco, a salad, over rice or eat on it's own!IngredientsIngredients3 poundsPork Loin Roast (fat trimmed)1 cupCola¼ cupBrown Sugar2 tablespoonsTomato Paste½ cupBroth (chicken or veggie work great)2 teaspoonsChili Powder1 teaspoonGarlic Powder1 teaspoonOnion Powder1 teaspoonCumin½ teaspoonSaltSee moreNutritionalNutritional144 Calories5 gTotal Fat46 mgCholesterol8 gCarbohydrate217 mgSodium16 gProteinFrom colleenchristensennutrition.comRecipeDirectionsIngredientsNutritionalExplore furtherSlow-Cooker Barbacoa Recipe: How to Make It - Taste Of …tasteofhome.comPork Barbacoa (Instant Pot Recipe)instantpoteats.comSweet Pulled Pork Barbacoa - Allrecipesallrecipes.comSlow Cooked Sweet Barbacoa Pork - Skinnytasteskinnytaste.comAuthentic Mexican Barbacoa Recipe - Las Recetas de Lauralasrecetasdelaura.comSlow-Cooked Pork Barbacoa - The Daily Mealthedailymeal.comRecommended to you based on what's popular • Feedback

    1. In a large, heavy duty Ziploc bag, combine the pork roast with one can of Coke and 1/4 cup of the brown sugar. Seal tightly and marinade in the refrigerator anywhere from 2 hours to overnight.
    2. Once the pork roast has had a chance to marinate for at least 2 hours, transfer the pork, along with the marinade, to a crock pot. Add the water and sprinkle the salt, garlic powder, pepper and chili powder over the pork roast. Cover and cook for 3 to 4 hours on high (or 6 to 8 hours on low), until the pork is tender enough to be easily shredded with a fork.
    3. While the pork cooks, combine the remaining can of Coke and the remaining 3/4 cup of brown sugar in a blender, along with the can of diced green chilies and red enchilada sauce. Blend until smooth, then set aside.
    4. Remove the pork from the crock pot and discard the cooking liquid. Shred the pork, removing any fat, and return it to the crock pot, along with the enchilada sauce mixture. Cover and cook for 1 to 2 hours on low, then check seasoning to see if more salt is needed. Serve in salads, burritos or tacos!
