1. Slice the peppers about 1/8-1/16th inch thick rings. At the end of the day, you have rings, seeds and hats. Put the seeds in with the rings. The hats just pitch.
2. Pack the peppers into your pint jars all the way up to the top, fairly densely packed.
3. Throw everything else into a spaghetti pot and bring to a boil.
4. Then spoon the pickle mixture into the jars using a ladel until the liquid reaches the top. Put on the lid and voila, you got pickled pepper rings.
