Green tomato canning recipes allowed them to put up those tasty and nutritious morsels in sauces, salsas, pickles and yes, even green tomato jam and pie filling. While red tomatoes seem “acidic” to our palates, they’re often not quite acidic enough for canning without added lemon juice.
Add 1 clove garlic, 1 head of dill (or 2 teaspoons dill seeds) and 1 bay leaf to each jar. Ladle hot liquid over tomatoes, leaving 1/4 inch head space. Remove air bubbles. Wipe jar rims and screw on lids finger tights. Process 15 minutes in a boiling water bath canner. Yields about 6 pints.
Pickled Green Tomatoes. Wash tomatoes and slice or cut into halves or quarters (depending on size). Pack tomatoes tightly into jars. Pour brine into jars to cover tomatoes, leaving 1/4" head space. Cap with lids and bands and process in a water bath 10 minutes to seal. Store up to one year.
