2. The prepare the pickling liquid combine the vinegar, water, salt and sweetener together in a medium saucepan. Bring the mixture to a boil.
3. In the meantime, pack the jars as tightly as possible with the cut green tomatoes. Be sure to add some chilies and garlic cloves in between the layers of tomato. Feel free to add other herbs and spices to the jars if you would like to.
4. Once the pickling liquid is at a boil, pour the hot liquid into a glass measuring cup. Then use the measuring cup to pour the hot liquid into the jars. Fill the jars to the very top making sure to cover the tomatoes completely. Place the lids on the jars and allow the jars to cool at room temperature for an hour. This will help to cook the tomatoes slightly so they are not raw. Place them directly into the refrigerator after an hour. Keep jars stored in the refrigerator until they are ready to serve.

1. 1. Put the water, vinegar, salt, and sugar into a small saucepot over high heat, and bring to a boil. As soon as it boils, turn off the heat and let the liquid cool for 3-5 minutes until hot, but no longer boiling.
2. 2. Cut tomatoes (into either thin slices or wedges) and pack them tightly into Mason Jars. I like to use the 24-oz wide mouth jars, but any size/shape will work. Depending on the size of your tomatoes and the size of your jars, you might fill 2-4 jars. There should be plenty of liquid in this recipe to cover them, either way.
3. 3. Peel and thinly slice the garlic cloves, and distribute them evenly between your jars of tomatoes. Sprinkle in some of the chili flakes to each jar as well.
4. 4. When liquid has finished boiling and cooled slightly, carefully pour it over the tomatoes, filling the jars to the top. Discard any extra pickling liquid.
