1. Begin by thinly slicing the flank steak against the grain. Add to a large bowl. Mix together cornstarch with cold water until fully dissolved and add to bowl with beef. Toss to combine the beef in the cornstarch mixture.
2. Place a skillet or wok on medium-high heat. Spray skillet with olive oil spray and using tongs, place beef strips in the skillet. Try not to overlap the beef strips so that they all cook evenly. Cook for approximately 1 minute on each side. Using the tongs, transfer the beef strips to a heat safe bowl or plate.
3. Turn heat down to medium and spray with more olive oil spray. Add in the sliced onion, broccoli, minced garlic and ginger. Cook until onion and broccoli are slightly tender. Add the beef back in. In a medium bowl, combine the soy sauce, beef stock, sweetener, chili garlic sauce and red pepper flakes (optional). Pour into skillet and combine with beef and broccoli. Allow sauce to slightly begin to boil and then turn heat down to low. Simmer for 5 minutes to allow flavor to soak into the meat. Serve and enjoy!
