Total Time: 35 minsCategory: DessertCalories: 70 per serving1. In a large bowl mash your strawberries until they are mashed up. I like to use a potato masher for this. You could throw them into the food processor to make it really easy, but you don't want them to liquefy so I find that doing it by hand is best.
2. In a medium sized pot add strawberries, sugar and lemon juice. Heat over low heat, stirring, until the sugar breaks down completely. Increase heat to medium high and bring to a full boil. Stir the jam often while boiling for a full 20 minutes - you'll want the temperature during this time to be 220 degrees.
3. Transfer the jam to a mason jar and store in refrigerator. This will turn into a thick jam consistency overnight. To can, transfer jam to sterile jars, leaving about 1/2 inch on top and seal the jars in a water bath. To freeze, place jam in freezer bags after cooking and place in freezer.

Frequently Asked Questions

How do you make sugar free strawberry jam?

Just cook the berries over medium heat until they are softened. Smash until no large pieces remain. Add the sweetener, lemon juice, and thickener. Transfer the sugar free strawberry jam into jars.

What can i use instead of pectin to sweeten strawberry jam?

If the strawberries do not contain enough natural sweetness, add up to 1 tbsp of powdered erythritol or another sweetener of your choice. Instead of pectin, use 1 tsp of ground chia seeds to fully set the jam. Fill into a sterilised container and store in the fridge.

Can you eat strawberry jam on a keto diet?

This strawberry jam recipe only contains 1.4 grams of fruit sugar per serving (1 tablespoon), which won't spike your insulin levels like regular jam. To keep your blood sugar levels stable do make sure you eat it as part of a meal. We had it for breakfast with these Keto breakfast buns (see photo above) and with some Greek yoghurt.
