Our Simple Low Carb Salad with Peanut Dressing is a fresh, Asian style coleslaw that will tantalize your taste buds. It is vegetarian and vegan-friendly – a great salad to bring to a picnic or potluck. The recipe makes 4 generous serves. We like to eat it for lunch or make half a recipe to serve as a side dish for our Indonesian Chicken Drumsticks.
In a medium-sized bowl, whisk the peanut butter, lime juice, soy sauce, ginger, sesame oil, and garlic. Thin with the water, starting with ¼ cup. (see notes.) Taste and add salt if needed. The amount of water you'll need to add will depend on how thick your peanut butter is and how thick or thin you'd like the dressing to be.
If you don't have a blender, just sub the garlic clove for about ¼ teaspoon of garlic powder and use a whisk to mix everything together. Try this super easy homemade Thai peanut dressing on your favorite salad, or enjoy it as a sauce for chicken or shrimp!
Peanut Salad Dressing If you're a peanut lover, this salad dressing is for you! It's a healthy salad dressing that gets its creaminess from peanut butter so it is 100% dairy-free. Lime juice, ginger, garlic, soy sauce, and sesame oil give it a flavor that is reminiscent of a Thai peanut salad dressing.
