Easy Peach Bellini Recipe is a quick cocktail that only uses a handful of ingredients including Prosecco sparkling wine and fresh or frozen peaches to make peach puree mix. I like to add vodka for an additional kick! This post was originally published in 2019. It has since been updated.
Traditional Italian Peach Bellinis are also made with fresh peach puree, not frozen peaches. If you prefer that style, follow the recipe below, just use fresh peeled peaches instead of frozen!
How to Make a Bellini. To make this classic bellini drink start by measuring out 2 ounces of peach puree or nectar. A jigger is super handy for this. Pour the peach puree into a champagne flute. Chilling the glasses first is an added bonus, but not necessary. Now simply top off the glass.
Combine peach slices, bubbly, and lime juice to a large blender. Save the sugar until after you taste the blended drink. It is best to let the frozen peaches sit out for about 20 minutes to thaw slightly. Or, pop them in the microwave for 20-30 seconds if in a rush. Once everything is in the pitcher, blend for 1-2 minutes.
