2. Add the egg, citrus zest and baking powder and combine. Stop working the pastry dough when it sticks to itself and no longer looks ragged on the edges.
3. Cover the dough in plastic wrap and let it rest in the refrigerator for at least two hours. It’s best if you can prepare this the night before you want to bake the pasticciotti.
4. To start the pastry cream, put the milk in a saucepan over medium-low heat. Stir occasionally to prevent scalding. It shouldn’t bubble; we’re just heating the milk to between 35°C and 40°C. Anything more than that could curdle, instead of temper, the yolks. If you haven’t got a thermometer, just test it on your wrist. It should be about as hot as you can stand without burning you.
