2. Layer the bottom of your dish with tomatoes and pour olive oil on top, season with salt & pepper and toss until tomatoes are coated.
3. Place feta cheese in the center and sprinkle with any additional herbs. Flip the cheese over a couple of times, coating with olive oil & herbs.
4. Bake in the oven for 30-35 minutes until tomatoes are bursting and cheese is melty. For a touch of charred tomato (adds a bit of smokiness to your recipe), leave your tomatoes in an additional 2 minutes on broil.
