Add the filling ingredients, except passion fruit and coconut to a food processor and blend to smooth. Add passion fruit and mix well to combine. Pour into the base (you can strain the seeds if you like through a sieve, I didn't because CBF). Bake for 15 mins then remove and sprinkle with the desiccated coconut.
