Take your time You start a paratha roti by making a flexible wheat flour, salt and water dough. Next, you’ll have to roll the dough into a flat circle. As is the case for any flatbread that involves rolling, it is well worth your time to not try to roll out that dough immediately after you made it.
Place the dough onto the tawa, brush the top with ghee, and quickly flip using two roti spatulas and coat the other side with ghee. Cook the paratha for 15-20 seconds until golden brown. Use the spatulas to spin and flip the roti making sure to evenly cook on all sides.
The layered dough is then cooked on a flat surface known as a Roti Tawa to create a fluffy, nutty, buttery, and chewy flatbread. While all these elements of Paratha remain with the Trini version, we make it out by literally kicking it up a notch during the cooking process.
Place the dough onto the tawah. Spread the ghee or butter on one side using the flat edge of the cup, then turn over onto the other side to cook. Spread butter or ghee on the other side the same way. When cooked on both sides use a dabla to break up the roti to give the ripped up, flaky appearance.
