4. Bring it to a boil. Cover, reduce the heat to medium-low and simmer for 40 – 60 minutes. The chicken should read an internal temperature of 165 F.

4. Dice the yellow onion, slice the red bell pepper thin, and mince the garlic. Add these three items to the pan. Cover with a lid, and let the ingredients cook on low for about 2 minutes, or until the onions and peppers are soft.
