Take a bowl and add chopped paneer to it. Chop the paneer in a way the pieces are neither too small nor too big. The small pieces will crumble down and larger ones will not absorb the spices. So the right size is important.
2. In the paneer add a pinch of salt, curd, a little turmeric powder, mustard oil, half teaspoon each of ginger and garlic paste and keep aside. You should ideally refrigerate it for 3-4 hours so that the spices are infused in the paneer pieces.
3. Now heat half of the ghee in a deep bottomed pan. The pan should be such that it has a lid that fits tightly to it. Now slice the onions in thin strips and deep fry them in the ghee. They should be browned well but ensure that they do not burn.
4. Keep aside the onions and and now add cinnamon, 3 cardamons, black cardamom, black pepper, bay leaves. Allow them to splutter and sizzle. Once the fragrance starts emanating from them, reduce the flame and add the ginger and garlic paste.
