A delicious recipe to make paneer fried rice, an Indian Chinese fusion dish that makes for a great meal. Rinse rice well a few times in lots of water. If using basmati rice, soak it for 30 mins. After 30 mins bring 2 cups of water to a rolling boil in a pot. Drain the water completely from the rice and add it to the boiling water.
First, take boiled rice. Next, cut the paneer into small cubes, toss it in corn flour and fry them to a crisp. Once done, heat a wok and add oil. To this, add ginger-garlic paste, then add fried paneer cubes. Let the flavours mix. Now throw in veggies, like onion, carrots, capsicum and mushroom.
Taste the sauce and add salt 1/2 teaspoon at a time until it is salted to your liking. Add the fried paneer to the saag sauce and let it simmer over low heat for another 10 minutes. In the same frying pan that you fried the paneer in, add 2 tablespoons of ghee or avocado oil and heat it over medium-high heat.
Lay the paneer cubes in a single layer in the pan. Let it sear for 1-2 minutes, and then using tongs, turn the pieces to sear the other side. Once both sides are seared, you can reduce the heat a little to finish warming the paneer.
