In a large mixing bowl, mix ricotta cheese and the rest of the parsley with nutmeg and the eggs. Take Palmini Lasagna Sheets and drain the water before rinsing thoroughly. In a lightly greased pan, layer the Palmini Lasagna Sheets. Then add an even layer of the meat sauce, followed by the ricotta cheese mixture, repeat the process.
Preheat oven to 350 degrees and lightly grease bottom and sides of lasagna pan with olive oil. Set aside. In a large stovetop pan heat olive oil to medium, then add the diced onions and garlic. Cook for 3 minutes. Add ground beef and season with salt and pepper. Break up and combine well with the onions, and cook until browned.
If the thin noodles come this short then they too will not be as nice as having a long spaghetti noodles. I can cut these thicker ones into thin pieces and see if they work well as spaghetti I have used sliced zucchini for the layers in the past. I like the taste of zucchini but it does kind of change the lasagna taste.
