1. Whisk together all dry ingredients and set aside. Preheat your oven to 350 degrees F and line a medium loaf pan with parchment paper.
2. In a large bowl, whisk together the eggs and mashed bananas, then vanilla and coconut oil until well combined.
3. Slowly stir the dry mixture into the wet (don’t use an electric mixer - you will overmix the batter and prevent it from rising properly) just until moistened and no visible flour remains.
4. Transfer batter to prepared loaf pan and bake in the preheated oven for 50-60 minutes until deep golden brown and toothpick inserted into the center of the loaf comes out clean. Allow to cool completely in the loaf pan resting on a wire rack, then remove using the parchment paper to help you, slice and serve. Enjoy!

2. Add the ground flax seeds to the water and let sit for 15 minutes. In the meantime, mix the dry ingredients in a large bowl, including the arrowroot starch, psyllium husk, baking soda and salt. Whisk well to combine.
3. Use a hand mixer to beat the eggs on high for about 3 minutes until they get fluffy. Add the flax seed/water mixture and honey. Beat for another minute. Add the almond butter, vinegar, and beat for another couple of minutes. Add the wet mixture to the dry ingredients and beat again for couple of minutes.
4. Pour the batter in loaf tin lined with parchment paper and bake for about 30-35 minutes in a 425F oven. The internal temperature of the bread should be 198F when it is done. If you have a probe thermometer you can stick it in the center of the bread after 25 minutes and set the target temperature to 198F.

1. Use a food processor, OR purée soaked nuts in a high-powered blender, with filtered water and oil until mostly smooth (about 1 minute [or longer for blender]). Add sauerkraut juice. Pulse again until just combined (about 10 seconds). Scrape into a glass or ceramic bowl. Stir in chia seed meal well. (Note: If you use a blender, you'll need to stop and start and use a tamper or wooden spoon to get the purée going. I use a blender personally, but it's a bit more work. See Recipe Notes for process photos.)
2. Cover loosely with a towel or plate. Place in a very warm location (ideally 95 to 105 degrees Fahrenheit) for 10 hours or overnight. I like to use a warming mat or nest my bowl over my Instant Pot on the Yogurt setting. Fermentation in a cool kitchen will still occur but it will take longer, about 24 hours.
3. Once nuts and seeds are soured (fermented), preheat the oven to 350 degrees Fahrenheit. Grease just the ends of a loaf pan and line with one strip of parchment paper (which allows you to pull it out easily).
4. Sift together coconut flour, psyllium, sweetener, baking soda and sea salt. Set aside.
