How to cook Paksiw na Isda (Fish in Vinegar) Heat a medium-sized pan and cooking pot then add vinegar and water. Add salt and whole peppercorn then stir. Bring to a boil. Arrange the fish in the pan and add the ginger, garlic, onion, and finger chili. Cover and simmer over medium heat for 20 minutes.
Filipino’s Paksiw is vinegar base, and we all know that vinegar is a liquid ingredient that helps preserve food longer, so there’s no worry even if you put it in the fridge and let it stay there for weeks. Also, vinegar is a perfect partner of any fish as it removes the fishy odor, which anyone hates.
For an adobong paksiw version, add 1/4 cup soy sauce and decrease the amount of salt. Enjoy paksiw na bangus as a main dish for lunch or dinner. It’s traditionally served with steamed rice and fish sauce (with chopped chilies if you want a bit of heat) for dipping. The stewed fish keeps well for days due to the use of vinegar.
The procedure is similar to other paksiw. Normally the fish and vegetables cook in a blend of vinegar and some spices like garlic, onion and ginger then cover and simmer for 10 minutes or until done. Estimated time of preparation and cooking: 20-30 minutes.
