1. Turn on the broiler and set the oven rack 6 inches from the heating element. Place oxtails in a large bowl and add 1 tablespoon Magic Mushroom Powder or Diamond Crystal kosher salt.
2. Toss well and and arrange in a single layer on a rimmed baking sheet.
3. Pop the oxtails under the broiler. Broil for about 5 minutes on each side or until nicely browned. Alternatively, you can brown the meat in batches in the Instant Pot on the “Sauté” function, but it’ll be tedious and messy.
4. While the oxtails are browning under the broiler, grab your Instant Pot and turn on the “Sauté” function. When the metal insert is hot, add the ghee or fat of choice. Toss in the sliced onions and carrots and cook until the onions are softened.

Add 1 tablespoon of butter and 2 tablespoons of flour. Make a quick little roux to thicken this really rich, really delicious stock. Cook the onion mixture for about two minutes. Then add 2 tablespoons of tomato paste. Return the oxtail back into the pressure cooker and pour in the beef broth. Add bay leaves, rosemary, thyme, sage, salt and pepper. Give it a stir and set the pressure cooker for 40 minutes on high.
3. Release the steam and skim off any excess fat accumulated at the top. Add the potatoes and carrots to the instant pot. Set the pressure cooker for another 10 minutes to cook the vegetables. When finished, add chopped parsley and serve hot with crusty bread.
