"My grandmother taught me how to make Hoska, a Czechoslovakian Christmas Bread. It is a sweet bread that I normally reheat and spread with butter." Dissolve yeast in 1/2 cup lukewarm water until bubbly. To the warm milk add soft butter, salt, sugar, vanilla, spices and orange rind. Let cool to lukewarm.
Place yeast and warm water in the bowl of a stand mixer and, with paddle attachment, stir until dissolved. Add lukewarm milk mixture and eggs and combine. Add 3 cups of the flour and beat with paddle until smooth. Add raisins, almonds, citron, and remaining flour and mix, 3 to 5 minutes until smooth.
Most Czech Christmas cookies use butter, but these old traditional ones rather include lard. “Sádlovky” is a diminutive of “lard”, kind of meaning “Little Lards”. They include only a few ingredients, and are easy to make. Melt-in-the-mouth good. To Americans, they look like a thumbprint cookie. Get creative with both the cookie flavor and fillings.
My Czech mother-in-law’s recipe does contain some lemon zest, but that’s the only fruit. It’s more of a chocolate chip nut cookie lover’s dream. This cake wonderfully combines bittersweet chocolate with hazelnuts (or walnuts or pecans), with the right amount of pleasant lemon zest.
