3. In a large mixing bowl using an electric mixer, blend the cream cheese with the sweetener and whipping cream; mix until no lumps remain in the batter. Add eggs, coconut flour, and vanilla and beat until smooth. Pour half of the filling over the prepared crust and sprinkle the remaining cookie crumbs over the top. Pour remaining filling over the cookie crumbs.
4. Bake until the cheesecake is golden on top and the center is almost solid, about 1 hour. Remove cheesecake from the oven and allow to cool on a wire rack.

1. Add all the ingredients (except the Oreo's) to your Ninja IQ. Press start and blend for 10 seconds to get things going; then press the Auto IQ button and blend for the full cycle. (If using another blender, just make sure it is one that is powerful enough to crush the ice!)
2. When done, take it out and test. If it needs more sweetness, add more stevia. If it needs to be thinner, add more milk. If it needs to be thicker, add 2-3 ice cubes. Blend again until desired consistency is reached. Add 2 Oreo mini cookies (or one Oreo Thin) and pulse just a few times. You don't want to break the cookies up completely.
3. Transfer to bowl (room for more toppings!) or a large glass. Top with remaining Oreo's and whatever else sounds good and sip up! I like to break my Oreo minis or Oreo Thins up and stir them in at the end. Blending them with the shake breaks them up too much for me personally, but I still love having them in each bite. (Recommended topping ideas: Cool whip, whip cream, more Oreo's, Oreo pie crust, sprinkles, PBFit, black cocoa, cereal, see more ideas above in post).

1. Preheat the oven to 350F and grease two 8″ or three 6″ cake pans cooking oil or vegan butter and line with parchment paper. Set aside.
