1. Zest and juice the oranges. You'll need at least 2 tablespoons of zest and 1/2 to 2/3 cup of fresh orange juice.
2. Bring water to a simmer in the double boiler. Place the second pot on top. Combine the zest, orange juice, sugar and eggs. Stir or whisk constantly as the mixture starts to thicken. Cook until the eggs have come to a safe eating temperature of at least 160 degrees F.
3. Add the cubes of butter and continue to stir for 15-20 minutes until the mixture is thicker and can coat the back of a spoon.
4. Pour the orange curd into clean mason jars and store in the refrigerator.

1. Pour the orange juice into a heavy based saucepan and bring to a simmer over low-medium heat. Let it simmer for 6-8 minutes until it has reduced to half a cup. (See notes if you want to skip this step)
2. Take the juice away from the heat and add the sugar, zest then eggs and egg yolks, - in that order. Whisk really well until everything is combined. Place it back over very low heat and whisk until the sugar has dissolved.
3. Add the cold butter a couple of pieces at a time, whisking until each addition is melted and incorporated before adding the next.
4. Continue cooking the mixture for 4-5 minutes until it is thickened and coats the back of a spoon or leaves a thick coating on the side of the pan when you tilt it. If you use a thermometer, the temperature should be 75C / 170F.
