Set aside and allow yeast to work about five minutes while prepping the pans and ingredients in the mixer.
2. Grease two bread pans. (Glass or ceramic preferred.)
3. Combine 2 cups of the flour with the rest of the dry ingredients in mixer using dough hooks for a few seconds on low. (The salt in the flour will not harm the yeast.)
4. Pour yeast mixture and 1 cup warm water and olive oil over the ingredients in the mixer. Mix ingredients on slow speed.

2. Add oil, half of the flour {2 1/4 cups} and salt. Start to mix using a dough hook {or by hand}. Add remaining flour until the dough pulls away from the sides of the bowl. Then using the dough hook {or on a floured surface, if mixing by hand} knead the dough for 4-5 minutes.
3. Cover the dough in the bowl with a dishtowel and let rise in a warm place for 20 minutes or until almost doubled in size.
4. Divide the dough in half and place each half into a loaf pan that has been generously sprayed with non-stick spray.
