1. Preheat oven to 350°F (180°C). Grease a 9-inch round pie dish with butter or coconut oil. Don't use a bigger dish, or you won't be able to cover it with the blueberries suggested in this recipe. You can use a smaller baking dish, but the biscuit batter will be thicker, and it will take longer to bake. Set aside.
2. In a large mixing bowl, combine the fresh (or frozen blueberries) with lemon juice, erythritol, and psyllium husk. Note that you can make this recipe without psyllium husk or xanthan gum, but the filling will be highly juicy and watery, and it will soften the bottom of the cobbler biscuit.
3. Arrange the blueberries into the baking dish. Set aside on the counter while you are making the cobbler biscuit.
4. In another mixing bowl, whisk together the almond flour, coconut flour, erythritol, salt, and baking powder.

5. Preheat the oven to 350 degrees.
6. While the oven is heating up, beat the eggs with an electric mixer in a large bowl until they are frothy.
7. On medium/low, heat the heavy cream, powdered Swerve, and salt in a pan on the stove. Keep stirring it until it starts to form tiny bubbles around the edges of the pan. DO NOT let it boil or else you will end up with cooked eggs instead of custard. You can check the internal temperature of the cream mixture with a thermometer. It should be 180 degrees.
8. The next step is to mix it into the egg mixture slowly and constantly whisking it. This way the mixture will remain smooth and not lumpy.
