1. Preheat the oven to 400 degrees F (177 degrees C). Line a baking sheet with parchment paper.
2. Arrange the hazelnuts in a single layer on the baking sheet. Roast for 8-10 minutes, until they are browned and fragrant.
3. Place the hazelnuts into a large container or bowl with a lid. Shake vigorously to remove loose skins. Repeat the process as needed, setting aside hazelnuts that already have their skins removed, until most of the skins are off. (Alternatively, rub the hazelnuts inside a folded towel to remove the skins.)
4. Place the skinned hazelnuts into a high-power blender, like the Blendtec 625. Process for 1-3 minutes, scraping the sides as needed, until the nuts begin to release oil and then form a smooth nut butter. (The Blendtec Twister Jar works well for this - just turn the lid counterclockwise as the blender runs.)

1. Pre-heat the oven to 350˚F. Line one large baking sheet with parchment paper or silicone baking mat. Set aside.
2. In the bowl of a standard electric mixer fitted with the whisk attachment, beat the butter, the sweetener and vanilla extract at medium speed until it becomes fluffy and well combined.
3. Add ½ cup of almond flour at a time. Notice that the dough will be a little crumby, but it will stick when pressed together.
4. After adding all the almond flour and everything is well combined, scoop about 1 tablespoon of the dough and shape it into balls. Make an indentation with your thumb into each ball. Probably the dough will crack a little when you press your thumb into it. You just have to re-seal some cracks by simply smooth it out with your fingers. But know that it’s totally fine to have a few cracks.

2. Melt the dark chocolate in a pan or in the microwave. I used a variety with 90% cocoa.
3. Add the pumpkin and sunflower seeds, the nut-ella and the melted chocolate and blend to combine. If you wish, stir in some more hazelnuts at the end for extra crunch.
4. Spread the mixture on a baking sheet - it should be sticky and quite firm. I just formed it into a rectangle of sort and pressed it down until it was about 2cm thick.

Calories: 99 per serving
1. You will need to roast the nuts. Place them on a cookie sheet lined with parchment paper and roast them on 300 degrees for 15 minutes. Your whole house will smell amazing!
2. Allow the nuts to cool down for about 10 to 15 minutes. Then try to rub as much of the skins off of the hazelnuts as you can. Don't worry if you cannot rub all the skins off. Just worry about the peels that can come off. The skins tend to be bitter so I remove as much as possible. The macadamia nuts will go from a light color to a toasted brown color when they are ready (as seen in the photos below).
3. Place all of the nuts in a food processor. You will use the pulse button to process these nuts into a spread. The nuts will start off as chunks, then go to a dusty powder but then eventually turn into a peanut butter type consistency once you process them long enough for the oils to naturally release. Don't be afraid to keep going during the process. The longer you mix them the smoother your spread will be in the end. I've attached photos of each step in this process so you can see exactly what I am talking about.
4. Next, add the remaining ingredients to the food processor: Cocoa powder, salt, sweetener and coconut oil and continue mixing it until the remaining ingredients have fully combined.

1. It is a good idea to start by whipping or whisking up your eggs. I suggest fitting a stand mixer with whisk attachment. Then whisk the eggs until they they triple in size, which can take from five to ten minutes to do. The eggs will turn a light yellow color when they are ready. Tip: start the mixer on a low speed and increase the speed to medium as they begin to incorporate with one another.
2. Preheat your over to 350. Prep a square cake pan for nonstick. I like to use parchment paper that overhangs the sides (easy to get the cake out for cutting ? ).Then spray the cookie sheets with parchment with a bit of muffin pan for nonstick. You can use nonstick spray too.
3. While the eggs are whisking and the oven is heating, we will need to warm up the hazelnut spread (1 cup if you are using an additional cup for a topping). In a microwave safe bowl, heat up the spread on a medium to high setting. You will need to stop and stir the spread every 15-20 seconds to stir it. It should take about one to two minutes to get warm for this recipe (not hot). Then use a fork to stir in the flour
4. When your eggs are ready remove the bowl from the mixer. Use a rubber spatula to fold in the remaining ingredients. Bake your cake for 30-35 minutes in the center of the oven or until a toothpick (or other tester) comes out clean. Allow the cake to cool before removing it from the pan. To top the cake with the leftover hazelnut spread, simply drizzle or swirl the spread on top.
