1. Add chicken, garlic, onion, bay leaf, chicken bouillon, salt, oregano and water to pot. Bring to a low boil and cook over medium heat until chicken is just cooked through (to about 160 degrees F –we will continue to cook it in the mole sauce), about 30 minutes. Remove chicken to a plate, (reserving the broth) cover and set aside.
2. Add the sesame seeds to a large dry skillet over medium heat and cook them, stirring constantly, until toasted. Be careful not to burn them. Set aside.

3. Preheat oven to 400 degrees F
4. Heat oil in large skillet and add chopped onion. Saute about 5 minutes or until translucent (add 2 tsp minced garlic for last minute if desired). Add chicken broth and simmer for 15 minutes. Let it cool a bit.
5. While onion mix is cooling, place chicken pieces in 9 x 11 baking dish and drizzle with a bit of olive oil and sprinkle with salt and pepper to taste. Bake at 400 degrees for 20 minutes
6. While chicken is baking, pour cooled onion mix into blender or food processor and add peanut butter and mole spice blend. Blend until smooth.
