2. In a medium pot, bring 1 c. of water to a boil. Once boiling, add corn and cover. Bring back to a simmer and cook for about 4-5 minutes or until corn is cooked through.
3. Drain water and return the corn to a pan and cook until a few pieces are a little browned/charred. Add butter and the mayo-crema mixture and cook until combined.
4. Divide into cups and top with cotijja, chili powder and cilantro. Serve warm.
