2. To a large clean, dry bowl, add egg whites. Add cream of tartar and a pinch of salt. Beat until mixture is foamy. It's important for the bowl to be clean and dry so you meringue forms stiff peaks.
3. Slowly add syrup or sweetener while continuing to beat mixture. Add food coloring and flavoring if using at this point. Beat until very stiff peaks form (around 3-5 minutes). Meringue needs to be so stiff that you can flip the bowl upside down without it falling out.
4. Add meringue mixture to a piping bag fitted with a large star tip or desired tip. Pipe little star shaped cookies out onto a parchment lined baking tray. Space about ½ inch apart.

6. Start the mixer on a medium speed. Stop the mixer when the egg whites start to look frothy and add the almond extract, 3 tablespoons Swerve and salt.
7. Until the egg whites whip up to a medium consistency, mix on a high speed. add the remaining 3 tablespoons of Swerve after the mixer is stopped.
8. Until the meringue becomes very stiff, continue to whip on a high speed and it starts to pull away from the sides of the bowl. Scrape the meringue out of the whisk after the mixer is stopped and down the sides of the bowl, then to make sure that everything is mixed evenly mix it again.
