Try this delicious Filipino Menudo Recipe. This is a recipe for basic pork menudo. It is a delicious dish that makes use pork, liver, and vegetables such as carrot and potato. Combine pork, soysauce, and lemon in a bowl. Marinate for at least 1 hour. Saute garlic and onion. Add the marinated pork. Cook for 5 to 7 minutes.
There are many ways to cook Pork Menudo. There is the version with ham (which tastes really good too) and there you can also add bell peppers and green peas. While I think that all version are good, I mostly prefer the simple one as long as it is a bit sweet and it has a few slices of red hotdogs.
Like all tomato-based stews, Menudo is best eaten the following day to give it some time for the flavors to blend. If you've got the time, cook the pork meat longer over low heat to make sure the meat is really tender. If in a hurry, use a more tender cut like the loin. Pork belly may be added.
Meat - you will encounter some Menudo made with chicken meat, beef liver, chorizo, sausages, and ham. The different ingredient used per recipe depends on the availability per region. Some will also add more ingredients to make it more special for celebrations to differentiate it from the usual way it cooked for everyday meals.
