I have used fresh vegetables for making vegetable masala khichdi, but you can surely use frozen vegetables as well. I have made khichdi with an equal part of rice and lentils, but you can also cook this with 1 part lentils and 2 parts rice. Add rice and dal to a mixing bowl.

How to make a spicy khichdi?

Add 1/4 to 1/3 cup chopped tomatoes and 1 to 2 green chilies (chopped). Saute for a minute or two. Then add 1 to 1.25 cups mixed chopped veggies along with 1/4 tsp turmeric powder, 1/4 tsp red chili powder and a pinch of asafoetida. For a more spicy khichdi, add 1/2 tsp red chili powder. Saute for a minute. Add the rice and moong dal.

What is the best rice for masala khichdi?

I prefer jeera rice which is also called chitti muthyalu in Andhra and jeeraga samba in Tamil Nadu. It is a short grain with an aromatic flavour. Whenever I make masala khichdi, I like to use mix dals which include yellow moong dal, arhar dal or tur and chana or split green gram dal.
