Delightful shortbread cookies with maraschino cherries and chocolate chips will become one of your favorite holiday cookies with the red and green cherries! Mix flour and salt, set aside. Cream 1 cup unsalted softened butter with 1/2 cup powdered sugar, mix in vanilla. Add flour and salt mixture and mix until it starts forming larger clumps.
Finally, place Maraschino cherry on the top of each ball of dough and press with finger until ⅔ of the cherry is inside the ball. Bake for 10/12 minutes. Wait for them to cool down and enjoy. They are so simple, but make great impression. I made the dough and my son helped me make balls.
In the bowl of a stand mixer, beat butter, powdered sugar, salt, cherry juice, almond extract, and food coloring (if using). Gradually beat in flour. Add in chopped cherries while mixer is on low speed. Remove bowl from mixer and fold in chocolate chips. Drop rounded tablespoonfuls onto parchment lined cookie sheets.
From a texture standpoint, overbaking the cherry almond shortbread cookies strips their tender, soft, slightly crumbly texture. And you’re left with hard cookies– not crumbly– just hard. And f rom an appearance standpoint, overbaking will leave orange brown dark spots on top of the cookies. Not a huge issue, but it replaces the pink!
