Add the ginger, garlic and green chillies and stir-fry for 20 seconds. Add the meat and cook, stirring, for 5 minutes. Stir in the tomatoes, ground roasted spices, salt and coconut milk and bring to the boil. Cover the pan, turn the heat to low and simmer gently for 1 hour or until the meat is tender.
