    1. Add olive oil to a hot pan. Add onions and salt. Cook on medium low heat until caramelized, about 35-40 minutes. Add a splash or two of balsamic vinegar. Cook a few more minutes.
    2. Mix chickpea flour, garlic powder, salt, and pepper.
    3. Add water and tamari to the chickpea mixture. Whisk until all the clumps are out. Add caramelized onions.
    4. Add enough oil to a hot pan to coat it. (This is a shallow fry.) You can tell the pan is hot enough when you drizzle a few drops of water and the water sizzles. Add caramelized onion fritter batter, a tablespoonful at a time, and fry on both sides until browned.

    1. In a large bowl mix together all of the ingredients besides the oil.
    2. Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan (a non-stick pan needs less oil). Scoop out 2- to 3-tablespoon mounds of the onion mixture into the pan, flattening the mounds slightly with a spoon and spacing them about one inch apart.
    3. Cook the fritters for 2 to 3 minutes, flip them once, and cook them for an additional 1 to 2 minutes until they’re golden brown and cooked through. (*See recipe note below for baking instructions).
    4. Serve warm with yogurt or sour cream or my Beet Aioli (recipe in the notes section).
