DirectionsStep1Line two 20cm cake pans with grease-proof paper.Step2Beat the eggs and caster sugar together in a mixer (or whisk) until light and fluffy (and tripled in size) - approx 5 minutes.Step3Sift the flour into a bowl and then sift again, a little at a time, into the eggs and sugar mixture.Step4Carefully fold the flour in using a spatula, trying to keep as much air in the mixture as possible.Step5Continue sifting and folding until all the flour is added and the mixture is smooth.Step6Divide the cake mixture evenly between the cake pans.Step7Pop in the pre-heated oven and cook for 20 minutes, or until a fork poked in the cake comes out clean.Step8Leave to cool slightly, then remove the cakes from pans and leave to cool completely.Step9Once cooled. Gently crush the raspberries with a fork and spread over one half of the cake.Step10Whip the cream until it holds, then spread evenly over the raspberries.Step11Carefully place the second cake layer on top.Step12Dust lightly with sieved icing sugar.
