1. Combine the sliced strawberries, monkfruit sweetener, vanilla extract (and lemon juice if using) in a small sauce pan over medium high heat. Bring the mixture to a simmer, while stirring occasionally.
2. Reduce the heat to medium to a light simmer (not a rolling boil) for 10 minutes, stirring and mashing the strawberries as they cook. The berries will reduce and the mixture will thicken.
3. Cook for another 5-10 minutes until the strawberries have reached your desired consistency.
4. Cool the strawberry mixture completely before serving.

1. Add the strawberries, Swerve, lemon juice and salt to a pot and cook over medium heat for 10 minutes or until they break down a bit.
2. Add the strawberries to the bowl of a food processor and sprinkle the gelatin over the top. Process until smooth. Pour into a bowl and allow to come to room temperature. Transfer to jars and store in the fridge and freezer.
3. I would store all the jars in the freezer, except for one. When you get low, take another one from the freezer and store in the fridge. This will last for months in the freezer and about a week or so in the fridge, once thawed.
4. You can serve over my vanilla ice cream (shown in recipe), just omit the chocolate chips. Or over my Fluffy Pancakes, see link in recipe.
