1. Melt the butter in a medium saute pan and add your sliced onions. Season with salt and pepper and cook over low medium heat for 7 – 10 minutes or until golden and caramelized. Remove from the pan and set aside. Remove the chorizo from the plastic packaging and add to the pan you just cooked the onions in. Cook for about 5 minutes, breaking it up with a spoon until cooked through. Remove and set aside. Add your cooked shredded chicken or turkey to the pan along with the coriander, cumin, garlic powder, and chipotle powder. Season with additional salt and pepper if desired. Heat for 3 – 5 minutes.
2. Spread the chicken out to a depth of about 1 inch in an oven proof casserole dish. Sprinkle the chorizo evenly over the top of the chicken. Then spread the onions over the chorizo. Finally, sprinkle the shredded cheese over the top. Bake at 375 degrees (F) for about 10 minutes or the cheese has melted. Serve hot with sour cream and whatever other Mexican “fixings” you prefer.

1. Layer 4 chicken breasts one at a time… between 2 sheets of wax paper/parchment paper or plastic wrap. Using the flat side of a meat mallet, a cast iron skillet, or a rolling pin, pound until 1/2 to 3/4 inch thick. Set the flattened chicken breast aside and repeat with the remaining breasts.
2. Scrape any debris from your grill grates and oil the grates well. Heat grill to about 400 degrees (don’t let the heat get above 400).
3. Season the chicken breasts with salt and pepper and spray a nice coating of grill spray on both sides of each piece.
4. Place the chicken on the grill, with the grill's grates running at an angle against the width of the breast. For the best grill marks, don't move the chicken once it has been set down and avoid pressing, prodding, or poking for 4-5 minutes. Flip the chicken (when the breasts lift up easily for flipping). Cook the second side until grill marks appear, about 5-6 minutes more. Temp the chicken and make sure it reaches 165 degrees before removing it from the gill.
