Chori pollo is a simple Mexican dish that combines chicken and chorizo and is then topped with cheese. It takes just 15-minutes to prepare, requires only ten ingredients, is gluten-free, and keto-friendly. Combine the oregano, garlic powder, cumin, onion powder, and chipotle/chile powder in a small bowl.
To assemble the Chori Pollo: Spread the chicken out to a depth of about 1 inch in an oven proof casserole dish. Sprinkle the chorizo evenly over the top of the chicken. Then spread the onions over the chorizo. Finally, sprinkle the shredded cheese over the top. Bake at 375 degrees (F) for about 10 minutes or the cheese has melted.
Cook for a minute, stirring continuously, then pour in the sherry. Remove the cooked onion from the pan and set aside. Add the chorizo to the pan and break it up with a spoon whilst cooking over medium heat. Continue to cook until the chorizo is done, (try to get a few crispy bits for added flavor).
Chori Pollo is one of those great meals that seems to taste even better when reheated the next day and it actually keeps well for several days in the fridge. It freezes well too - so why not make a double batch and have this magnificent Mexican meal on hand ahead of time!
