Lobster pie has long been a popular way to serve our favorite crustacean. This one, which we’re calling a lobster casserole with Ritz cracker topping, is a classic, loaded as it is with butter and high-quality sherry to bring out the meat’s natural sweetness. The buttery cracker topping gives it a pleasant crunch. Preheat oven to 350°.
Melt butter and add black pepper and sherry. Blend this mixture well with the crackers. Preheat oven to 350º . Place lobster in a casserole dish and top with cracker mixture. Drizzle remaining butter on top and bake at 350º F for 20-25 minutes.
Cook over low heat just to let the butter melt. Stir it all together so the crackers get nice and coated. Spread this evenly over the lobster. Push it down a bit so that it can absorb the liquid in the pie. Set back in the oven for about 5 minutes. Let it sit on the counter for a couple minutes, just to set up and cool a bit.
Firstly, put the Ritz cracker and oyster crackers into a zip bag. Use your hand to crunch them up. Take your crushed cracker in a bowl and mix them together. Put the pan on medium-high heat, then melt 4 tablespoon butter together with sherry and black pepper. Stir the mixture then set them aside. Add the mixture above into the crunch cracker.
