1. Soak the dried chickpeas and dried fava beans in water in 2 separate large bowls overnight. Rinse thoroughly 12 hours (or so) later and set aside.
2. Add the chickpeas to the food processer and pulse until crumbly and no more large pieces remain. Return to the bowl. Do the same with the fava beans and return to the bowl.
3. Wash the bunches of cilantro and parsley and trim off the stems. Add to the food processor and process until small but not mushy.
4. Peel the onions and cut into quarters. Pulse in the food processor until no large pieces remain.

2. Place chickpeas in a high-speed food processor and pulse until grainy, remove and set aside.
3. Add onion, garlic, parsley and cilantro to the food processor and pulse until smooth. Pour chickpeas back into the food processor and add all remaining ingredients (salt through cayenne.) Pulse until everything is evenly incorporated. Be sure to use a rubber spatula to scape down the sides at least once.
4. Remove mixture from the food processor and place in a bowl. Cover with plastic wrap and refrigerate at least once hour.

2. Place the chickpeas in the bowl of a food processor and blend until they're powder-like. Add the parsley, cilantro, onion, garlic, flour, salt, cumin, coriander, and black pepper and blend until the mixture turns to paste, scraping down the sides as needed. Cover the bowl and refrigerate for 1 hour to set. When ready to make, sprinkle baking powder on the falafel mix, and fold in gently.
3. Scoop the falafel using a falafel scoop, an ice cream scoop, meat baller or your hands. Form a round ball with the falafel, each with about 1-2 tablespoons of the mixture. The balls may feel loose at first but they will bind once they fry. Makes roughly 36 falafel patties. Sprinkle sesame seeds on the patties, if desired
4. Heat 1 inch deep of cooking oil in a frying pan on medium heat. Gently place in the frying pan until the color turns brown, about 2-3 minutes per side. Be careful not to overcrowd the pan and fry in batches as needed.
