1. The night before:To make the sauce: Combine all the sauce ingredients and store them in an airtight container in the fridge. Store the cut-up bell pepper, mushrooms, water chestnuts, and seitan in another airtight container in the fridge.
2. In the morning:Combine the sauce, pepper, mushrooms, water chestnuts, and seitan in the slow cooker. Cook on low for 7 to 9 hours.
3. 30 minutes before serving: Turn up slow cooker to high. Make a thickener by mixing the cornstarch with some of the sauce from the slow cooker in a small cup, then add it back to the slow cooker. Right before serving, stir in the sesame oil. Serve over steamed rice, and top with the peanuts.

2. Place the cauliflower florets on a baking sheet and drizzle with olive oil. Sprinkle salt and pepper overtop and toss to coat. Roast the cauliflower in the oven for 15 minutes.
3. Meanwhile, in a medium sized bowl whisk the soy sauce, hoisin sauce, sherry vinegar, sesame oil, brown sugar, cornstarch, garlic, and ginger.
4. Remove the cauliflower from the oven. Add the chiles to the baking sheet and pour the sauce over the cauliflower. Toss to coat. Spread the cauliflower into an even layer and roast for another 15-20 minutes, tossing the cauliflower every 8 minutes or so. The sauce will thicken as it bakes and then cools.
