1. In a stand mixer bowl, pour in warm water and sugar. Stir until sugar is dissolved. Sprinkle yeast on top and let sit for 10 minutes (until foamy).
2. Attach dough hook and turn mixer on low. Add all-purpose flour (one cup at a time), honey, egg, egg yolk, canola oil, and salt until combined. Slowly add whole wheat flour (one cup at a time).
3. Once a dough ball has formed, knead dough with stand mixer on speed level "2" for 5 minutes. The top of the dough will pull away from the bowl but the bottom will not. (This is a moist, sticky dough.)
4. Remove bowl from mixer, add 1 Tablespoon olive oil to bottom of bowl, and toss dough around in oil until completely covered. Cover bowl with greased plastic wrap and a dishtowel. Let dough rise for 1 hour or until doubled in size.

1. Add the honey, yeast and 1/4 cup of warm water to the bowl of a stand mixer. Allow to sit for approximatly 5 minutes until yeast becomes foamy.
2. Add the remaining ingredients to the mixer and set to low. Mix until the dough comes together and pulls away from the sides of the bowl.
3. Turn the dough out onto a floured counter top and knead for 5-8 minutes until dough is smooth and elastic. If the dough is really sticky you can add 1-2 tablespoons of flour at at time until it smooth.
4. Lightly coat a bowl with oil and place the dough in the bowl. Cover with plastic wrap or a clean tea towel and allow to rise in a warm place until doubled. This will usually take about an hour. If it is cold out, you can place the bowl in the oven with the oven light on, or use the proof setting on your oven if it has it.
