2. In a separate bowl, combine the almond flour, baking powder, and baking soda.
3. Add the dry flour mix into the creamed mixture until dough forms.
4. Drop onto Silpat lined baking sheet using a cookie dough scoop. I recommend freezing the cookie dough scoops for 10 to 15 minutes before baking to prevent them from becoming too flat.

2. Combine the melted butter, ricotta cheese, egg and extract in a large bowl and whisk together.
3. In a smaller bowl combine the almond flour, erythritol, baking powder and soda and combine. In two parts add the dry to the wet mixture and whisk to combine.
4. Using a cookie scooper scoop out 18-20 equal sized cookies onto the baking sheets. Slightly flatten them out (as seen in our recipe video).
