1. Peel, finely chop and add the onions to a pan over a medium heat with a splash of oil.
2. Sweat it down for 10 minutes. Add the split peas and 800ml of hot water to the pan and bring to the boil, then turn down the heat and simmer for 20 minutes.
3. Halve, peel and chop your squash into 2cm cubes, then add to the pan and cook for a further 25 minutes, or until everything is soft and the liquid is reduced and creamy, removing the lid for the last 10 minutes.
4. Finely chop the dried chilli, then toast with the cumin and coriander seeds in a frying pan over a medium heat for 1 to 2 minutes, or until fragrant.

1. Place the lentils in a fine mesh sieve and wash under cold running water, agitating them with your hand until the water runs clear.
2. Gently heat the oil in a large heavy-bottomed saucepan and cook the onion until it starts to soften. Meanwhile, prepare the stock and remaining vegetables.
3. Add the garlic, ginger and dry spices to the pan, and cook on medium-low heat for 2 minutes. If it starts to stick to the pan, add a splash of water to loosen it. Add the lentils and stir through.
4. Add the stock, tomatoes (or tomato puree), squash and creamed coconut. Bring to the boil then reduce the heat, cover with a lid, and simmer for 15-20 minutes. Stir towards the end of the cooking time and add a splash of extra stock or water, if needed. When the lentils are tender, remove the pan from the heat and leave to rest for a couple of minutes. Season with salt and freshly ground black pepper, to taste.
