1. Place the chopped up mango, jalapenos and coconut sugar on a pan and cook on medium heat, stirring occasionally until mango and jalapeno start to soften and brown (around 18-20 minutes)
2. In the meantime, blend shallots, garlic, ginger and lime juice in a small blender to a paste.
3. Add the blended mixture, salt and vinegar to the pan and stir for a few minutes until everything is well incorporated.
4. Use a hand masher to mash everything up till the chutney turns thick.

1. In a large pot set to medium heat melt 1 tablespoon butter and 1 tablespoon olive oil and add the onions. Stir occasionally until the onions are soft (golden/starting to caramelize), and sweet to the taste (at least 20 minutes). *you may need to adjust the heat and turn it down if they are browning too fast.
2. Next add the garlic and jalapeño and stir together for 2 minutes.
3. Add remaining ingredients and bring to a simmer. Cook for 15-20 minutes, or until the mango cubes have softened.
4. Using a hand immersion blender, or countertop blender, blend your sauce until smooth and there are no chunks.
