Total Time: 5 hrs 45 minsCategory: Diabetic Ground Beef RecipesCalories: 109 per serving1. Put onions, carrots, celery, butter and oil in a heavy-bottomed Dutch oven and place over medium-high heat. Cook, stirring occasionally, until the vegetables are lightly browned, 8 to 15 minutes.
2. Add ground beef and break it up with a wooden spoon. Season with salt and continue stirring until the meat has lost its red color, about 4 minutes.
3. Add wine and cook, stirring occasionally, until it has almost completely evaporated, 18 to 25 minutes. Add milk and nutmeg and cook, stirring occasionally, until the milk has mostly evaporated, 12 to 18 minutes.
4. Coarsely chop tomatoes and add them and their juice to the pot. Once the tomatoes have started bubbling, reduce the heat to low so that the sauce is barely simmering. Cook uncovered for 4 hours, stirring occasionally. If all the liquid evaporates before the cooking time is up, add water 1/2 cup at a time as needed. After 4 hours, make sure all the liquid has evaporated before you remove the sauce from the heat. Blot or skim any fat from the surface before serving.

Category: DinnerCuisine: American, MediterraneanCalories: 632 per serving1. Cut spaghetti squash in half lengthwise and scoop out the seeds. Either roast (flesh side down) in 375 degree oven for about 45 minutes or cook in the microwave for about 10 minutes. If roasting, brush the tops of the squash with a little oil so it doesn't dry out. If microwaving, I just turn the squash flesh-side-down on a plate and microwave for 10-12 minutes. Either way, just cook until it is tender enough to easily stick a fork in it. Leave it in the microwave or oven until ragu is done.
2. While the squash is cooking, heat the oil in a large skillet over medium high heat. Add the onion and cook for about 3-5 minutes, or until translucent. Add the garlic and cook quickly (30 seconds). Add the bell pepper and cook until softened, about 5 minutes.
3. Increase the heat to medium high and add the ground pork. If using Italian sausage, cut the casings open and spread out the sausage throughout the pan, chopping it with your spatula to break it up. Cook until the pork is browned, about 5 minutes
4. Add the crushed tomatoes (or smoked tomatoes), balsamic vinegar, salt and sugar and bring to a boil. Reduce the heat to low, cover and simmer, stirring occasionally for anywhere from 15 minutes to 30 minutes until it is reduced to your desired thickness.

Frequently Asked Questions

How to make italian beef ragu?

To make Italian beef ragu, I use 1 carrot, 1 celery stick and 1 white onion. Saute the chopped veggies in a large pan with a little olive oil. The key is to saute the veg slowly on a low/medium heat so they soften and release all the delicious flavours without browning or burning (around 7-8 minutes, photo 1)

Why is italian ragu slow cooked?

This Italian ragu is slow-cooked because it needs time to develop all the incredible flavours BUT it's not as time-consuming as you may think. Because this classic beef ragu recipe is made with ground beef and pork it doesn't need as much time as a big chunk of meat would to break down and tenderise.

What is a ragù sauce?

A ragù is a classic Italian meat-based sauce that is served with pasta. While tomatoes and other vegetables are included, a ragu is really more about the meat rather than the tomatoes and vegetables in the sauce around it.

How long do you cook spaghetti ragù?

Cook the ragù over a low heat for about 1 hour, then partially cover with a lid, allowing a small gap, cook for a further 3 hours. Check the sauce often, stirring to make sure the sauce doesn't stick to the bottom and burn After this, remove the remaining meat from the pot.
