1. Preheat the oven to 320°F/160ºC. Line two large baking sheet with non-stick parchment paper.
2. Beat the butter and sugar together until smooth.
3. With the mixer on low speed incorporate the ground hazelnuts and flour and salt. Be sure that the mixture is well combined by scraping the bowl with a spatula getting right to the bottom. Mix again if necessary.
4. Using a spatula scrap the dough onto a sheet of plastic wrap, press into a flattened ball. Wrap well with plastic and refrigerate for 2 hours or even overnight.

6. Fold in the hazelnut meal, erythritol, stevia and vanilla until well combined. I don’t like my cookies too sweet, so do make sure to taste the dough and adjust the sweetener to your liking.
7. With a spoon, drop the dough on a silicone baking sheet or a baking sheet lined with parchment paper. Flatten to your liking.
8. Bake at 160° Celsius (320°F) for 25 minutes or until lightly browned.
